ingredients:
- 1 container spinach & arugula
- ½ cup cherry tomatoes
- 1 avocado
- ¼ cup cilantro
- ¼ cup pumpkin seeds
- ⅓ can white beans
- 2 salmon filets
- 3 packets of LAV dressing (tahini or pomegranate pair best!)
steps:
- toss cauliflower in olive oil & roast at 400 degrees for 15-20 min
- slice salmon into bites & season. pan fry in olive oil for 4 min per side or until crispy. set aside and let cool.
- assemble salad: add spinach/arugula to bowl with chopped tomatoes, diced avocado, chopped cilantro, pumpkin seeds, rinsed & drained white beans.
- top with crispy salmon bites.
- when ready to eat, drizzle with a packet of lav creamy tahini or sweet pomegranate dressing.
