Ingredients

4 cups fresh arugula

1 cup cooked wild rice (cooled)

1 apple, thinly sliced (Honeycrisp or Fuji work best)

1 avocado, sliced

1 cup cooked chicken breast, sliced or shredded

¼ cup toasted almonds (roughly chopped)

2 packets LAV Sweet Pomegranate Dressing
Instructions

Prepare the base: Place arugula in a large mixing bowl or divide evenly onto plates.

Layer in grains & protein: Add the cooled wild rice and sliced chicken over the arugula.

Add freshness: Arrange apple slices and avocado on top.

Finish with crunch: Sprinkle toasted almonds across the salad.
