The perfect summer to fall transition meal we can't stop making.


Ingredients

  • 4 cups fresh arugula
  • 1 cup cooked wild rice (cooled)
  • 1 apple, thinly sliced (Honeycrisp or Fuji work best)
  • 1 avocado, sliced
  • 1 cup cooked chicken breast, sliced or shredded
  • ¼ cup toasted almonds (roughly chopped)
  • 2 packets LAV Sweet Pomegranate Dressing

Instructions

  • Prepare the base: Place arugula in a large mixing bowl or divide evenly onto plates.
  • Layer in grains & protein: Add the cooled wild rice and sliced chicken over the arugula.
  • Add freshness: Arrange apple slices and avocado on top.
  • Finish with crunch: Sprinkle toasted almonds across the salad.
  • Dress & enjoy: Drizzle generously with LAV Sweet Pomegranate Dressing, toss lightly, and serve immediately.
