The perfect summer to fall transition meal we can't stop making.
Ingredients
- 4 cups fresh arugula
- 1 cup cooked wild rice (cooled)
- 1 apple, thinly sliced (Honeycrisp or Fuji work best)
- 1 avocado, sliced
- 1 cup cooked chicken breast, sliced or shredded
- ¼ cup toasted almonds (roughly chopped)
- 2 packets LAV Sweet Pomegranate Dressing
Instructions
- Prepare the base: Place arugula in a large mixing bowl or divide evenly onto plates.
- Layer in grains & protein: Add the cooled wild rice and sliced chicken over the arugula.
- Add freshness: Arrange apple slices and avocado on top.
- Finish with crunch: Sprinkle toasted almonds across the salad.
- Dress & enjoy: Drizzle generously with LAV Sweet Pomegranate Dressing, toss lightly, and serve immediately.
