ingredients:
- 1 large burrito-size tortilla
- 1 small tortilla or tostada (for crunch layer)
- ½–¾ cup shredded chicken (rotisserie works great)
- 1 tablespoon hummus
- ½ cup shredded romaine
- ¼ avocado, sliced
- 2 tbsp cucumber, diced
- 2 tbsp cherry tomatoes, chopped
- 1 tbsp pickled red onion
- feta (optional)
- 2–3 packets of LAV tahini dressing
steps:
- season shredded chicken with salt, pepper, and a squeeze of lemon. warm slightly if desired.
- lay large tortilla flat and spread 1 tbsp hummus in center.
- add shredded chicken and place small tortilla or tostada on top (this creates the crunch layer).
- layer romaine, cabbage, cucumber, tomatoes, avocado, pickled onion, and feta.
- drizzle with more lav tahini dressing.
- fold edges inward in pleats until fully sealed.
- cook seam-side down in a lightly oiled pan over medium heat for 3–4 min per side until golden and crisp.
- slice and enjoy.
