crispy lentil salad

Ingredients:

  • Cooked and cooled lentils
  • Base of arugula
  • 1/4 cup chopped & roasted sweet potato
  • 1/4 cup chopped grapes
  • 2 tbs pecans
  • 1/2 avocado
  • 1 packet of LAV sweet pomegranate dressing

Steps:

  • Toss cooked lentils in olive oil, salt and pepper. Arrange on baking sheet and roast in oven for 25 min at 400 degrees, or until crispy. 
  • Once lentils are finished, toss all salad ingredients in a bowl. Top with crunchy lentils and drizzle with LAV dressing. Enjoy!
