Ingredients:
- Cooked and cooled lentils
- Base of arugula
- 1/4 cup chopped & roasted sweet potato
- 1/4 cup chopped grapes
- 2 tbs pecans
- 1/2 avocado
- 1 packet of LAV sweet pomegranate dressing
Steps:
- Toss cooked lentils in olive oil, salt and pepper. Arrange on baking sheet and roast in oven for 25 min at 400 degrees, or until crispy.
- Once lentils are finished, toss all salad ingredients in a bowl. Top with crunchy lentils and drizzle with LAV dressing. Enjoy!
