peach & avocado salad w/ charred corn

  1. Grill corn until charred, then cut off the cob. (Or use canned corn sautéed in a pan until brown! 🤫
  2. Slice ripe peaches and avocado.
  3. Add to a bowl with arugula, cooked quinoa, and crumbled cotija cheese.
  4. Sprinkle with pumpkin seeds.
  5. Drizzle generously with LAV Sweet Pomegranate Vinaigrette.
